  • 1-2 eggs and 2 egg whites
  • 1/4 of a chopped white onion
  • 1 cup of spinach, chopped
  • 1-2 tbsp. salsa of choice
  • 1 medium sized bell pepper
  • 1/2 tsp. olive oil


  1. Preheat oven to 375 degrees
  2. Sauté the onions and spinach in 1/2 tsp. olive oil
  3. Season with salsa after onion and spinach are sautéed
  4. Distribute mixture of eggs and sautéed onions and spinach evenly into pepper halves
  5. Add 2 tbsp. egg whites on top
  6. Bake in oven at 375 for approximately 30 minutes or until eggs are set
