“Banana Bread” Recipe the 7Company Way!

Dive Into Our Tasty Banana Bread Recipe This Season! 

Bite into this amazing Banana Bread recipe during your lunch break for a tasteful treat! Our ‘Banana bread’ can be made from Ideal Protein Banana Pudding or Lemon Pudding to give you a fruity twist to your daily routine! This recipe creates 9 medium or 6 large portions that all together count as only 1 non-restricted item! Make a batch this weekend to keep you satisfied and on track of your weight loss this week!

Ingredients:

  • 2 beaten egg whites
  • 1 Package IP Banana Pudding
  • 1 cup or more shredded zucchini
  • 1 tsp baking powder
  • 1 small package Stevia or another sweetener (about 1 tsp)
  • 1 tsp or more cinnamon
  • 1/2 tsp or more cardamom
  • 1/4 teaspoon allspice
  • 1/4 – 1 tsp nutmeg
  • Optional: 1 tsp Rum extract and/or vanilla extract

Directions:

  1. Preheat oven to 180 C (about 350 F).
  2. Grate zucchini (1/2 a large zucchini for about 1-1.5 cups).
  3. Use a paper towel to soak up the moisture/water from the zucchini.
  4. Dust the shredded zucchini with the various spices (cinnamon, cardamom, allspice, nutmeg) and let sit for about 2 minutes.
  5. While waiting, beat egg whites with a pinch of salt until they hold a shape.
  6. Add in IP Banana pudding, baking powder, and sweetener.
  7. Blend.
  8. Add in zucchini and rum/vanilla extract if using and blend.
  9. Spray a muffin tin with Pam or another non-stick spray.
  10. Pour batter into muffin tins.
    1. For 9 medium pieces, fill each section up half way or fill up 6 full ones for larger pieces.
  11. Cook for about 10-15 minutes until top turns dark, but not burned. (Watch carefully).

NOTE: This “banana bread” will puff up gorgeously when baking, but will often deflate after taking from the oven. You can try cooking a bit longer or just enjoy the funny looking, but tasty treats as they fall.

This recipe will also work with Chocolate & Lemon IP Pudding.

Chicken Fajitas are so delicious and with the Ideal Protein Diet, you can still enjoy them while you lose weight! They are low in carbs, high in protein, full of flavor and simple to prepare!  Our flavorful chicken fajita recipe is the perfect Phase 1-Friendly dish to kickstart your summer off with some flavor!

Chicken Fajitas

  • 8 oz. boneless chicken
  • 1 tsp. oil
  • ¼ cup water
  • 2 tbsp. Fajita Seasoning Mix
  • 2 cups of peppers and onions (onions just lightly heated)
  • ¼ Tsp cumin powder
  1. Cut the chicken into thin strips.
  2. Heat oil in a non-stick pan over medium heat.
  3. Add chicken, cook and stir until it is no longer pink.
  4. Stir in water and seasoning mix and cumin powder.
  5. Add peppers and onions.
  6. Cook uncovered over medium heat for 4-6 minutes, stirring occasionally.

Fajita Wraps

  • 1 packet Ideal Protein Potato Puree
  • ¼ tsp. baking powder
  • 1 egg white
  • Water
  • Non-stick cooking spray
  1. Mix the ingredients for the wrap until it is the consistency of pancake mix.
  2. Spray the skillet and pour the mixture into it.
  3. Make two think tortillas from the mixture – tortillas will be about 6-8 inches.
  4. Cook on both sides for two minutes on each side.
  5. Add chicken fajitas into the tortillas and enjoy!
