Mint And Lemon Blueberry Pudding Recipe

With the weather warming up and the sun shining down on us, add some tang to your summer with our amazing mint and lemon blueberry pudding recipe! This Phase 1-friendly recipe brings together the beautiful aroma of mint with the zesty tang of lemons to give you a delicious pudding to keep you cool and refreshed all summer long!

Ingredients:

  • 1 packet of Ideal Protein Blueberry Pudding Mix
  • 1 tsp. of chopped mint
  • 1/2 a lemon zest without the white
    • (By removing and avoiding the white part of the peel underneath the zest, you are taking out any bitterness the lemon could add to the meal. The zest itself is full of flavor!)

Directions:

  1. Prepare the pudding packets as directed.
  2. Mix in the mint and lemon.
  3. Let rest for 3 – 5 minutes.
  4. Freeze for 15 minutes.
  5. Take out and savor the refreshing mix of aromas!

Our Ideal Protein Chicken and Vegetable Soup is perfect for any weather and helps keep your taste buds satisfied while also eating healthy!

Ingredients:

  • 4 Cups of vegetables (refer to the Phase 1 select vegetables)
  • 4 Ounces of Cooked Chicken
  • 1 Packet Ideal Protein Potato Puree for thickening
  • 1 Tbsp Cilantro
  • ½ Tsp of Cumin Powder
  • ¼ Tsp of Chili Powder (Optional)
  • 2 Cloves crushed Garlic
  • ¼ Tsp Sea salt
  • ¼ Tsp of Black Pepper

Directions:

  1. Cut vegetables into 1/4 inch cubes.
  2. Boil vegetables.
  3. Add salt, pepper, and chili powder until soft.
  4. Add cooked chicken and prepared potato puree.
