Roasted Red Pepper Dip

Ideal Protein Phase 1 Friendly

Ingredients:

  • 1 Jar Roasted Red Pepper
  • 3-4 Large Cauliflower florets steamed until softened
  • Sea Salt
  • Garlic
  • Basil

Directions:

  • Steam cauliflower then process in food processor along with garlic.
  • Process red peppers separately.
  • Combine both in a bowl along with basil and sea salt.
  • Stir all ingredients

Tips: Best if refrigerated for a few hours.
Use as a dip with vegetables or Ideal Protein Crisps.
Great on top of lettuce and Ideal Protein Rotini Pasta as a satisfying lunch.

Overnight Kale Salad

Ideal Protein Phase 1 Friendly

Ingredients:

    • 3 Tbsp. Apple cider
      vinegar
    • 2 Tbsp. Shallot minced
    • 1 Tbsp. Ideal Protein

Maple Syrup

  • 1 Tbsp. Extra Virgin Olive Oil
  • 1 tsp. Salt
  • 1/8 tsp. Black Pepper
  • 2 Bunches Kale (dinosaur or curly)
  • 1 Cup Jicama julienne cut (optional)
  • When you are
    on maintenance, you
    may add 1/4 cup
  • Pecorino Romano & 2 Tbsp Pine Nuts

 

Directions:

  • Whisk vinegar, shallot, syrup, olive oil and salt & pepper.
  • Toss kale in dressing, coat evenly, the dressing will seem
    light, but kale will wilt down to half its volume.
  • Transfer kale to a lidded container.
  • Refrigerate overnight.
  • Plate out four portions, sprinkle with julienned jicama
    and enjoy.
