Apricot Dijon Pork Tenderloin Recipe

  • 1 package pork tenderloin (2 loins)
  • 4 tbsp Walden Farms Apricot Jelly
  • 1/2 tsp garlic powder
  • 2 tbsp olive oil
  • 1 tbsp dried rosemary
  • 1 tbsp Walden Farms pancake syrup
  • 2-3 tbsp dijon mustard
  • 1/2 tsp onion powder
  • Sprinkle of Ideal Protein salt and black pepper
  • Cooking spray



  • Preheat oven to 400
  • Heat apricot jelly for 20-30 seconds in microwave, then add dijon mustard and stir
  • Mix dried spices together
  • Rub olive oil over pork loins, then sprinkle with the dried spices and jelly/mustard mixture (let it marinate for 20-60 minutes)
  • Spray baking dish with cooking spray, add pork loins, coat with remaining marinade
  • Roast for 30-40 minutes until internal temperature reads 160 degrees for medium
  • Let stand 10 minutes before serving
